The Best Roasted Potatoes

  1. Parboil the potatoes: put them in a big pot and submerge in cold salted water
  2. Bring to a boil and let simmer for about 7 minutes.
  3. Then drain in a colander and shake potatoes really well
  4. Next, put potatoes in a roasting pan with a good glug of olive oil, some sea salt and black pepper.
  5. Mix everything
  6. Bake for 20 minutes at 190C.
  7. Next, take the pan out of the oven and add chopped rosemary
  8. Put back in the oven for around 20 minutes or until nicely roasted
