Amish Oatmeal Cookies Recipe
- 1 1/2 c. Raisins
- 1 c. Salted peanuts
- 6 c. Flour
- 3 tsp Baking pwdr
- 1 tsp Salt
- 1 tsp Grnd nutmeg
- 1 tsp Cinnamon
- 1 1/2 c. Crisco shortning
- 3 c. Sugar
- 2 c. Quick Cooking Oatmeal
- 3 tsp Baking soda
- 1 c. Butter lowfat milk
- 1/2 c. Dark molasses
- 4 x Large eggs
- Grind raisins and peanuts through food grinder, set aside.
- Combine flour, baking pwdr,
- salt, nutmeg and cinnamon, in a very large bowl.
- Cut in crisco till mix is fine crumbs.
- Add in grnd raisin mix, sugar and oats, mix well, using hands if necessary.
- In small
- bowl dissolve soda in butter lowfat milk.
- Add in molasses and 3 Large eggs.
- Beat well, till well blended.
- Add in to flour mix, mix well with spoon.
- Drop by heaping Tbsp.
- onto greased
- baking sheets.
- Flatten with the bottom of a floured glass to 2 1/2 inch round.
- Beat
- remaining egg till well blended, brush tops of each round.
- Bake at 375 for 8-10 min.
