Cranberry Acorn Squash
- 12 cup raw fresh cranberries
- 1 small apple, peeled cored and chopped in small pieces
- 14 cup currants
- 12 cup orange juice
- 1 12 tablespoons honey
- 1 tablespoon melted butter
- 1 pinch salt
- 2 acorn squash, cut in half and seeds removed
- Heat oven to 350.
- Combine cranberries, apples, currants, orange juice, honey, butter and salt in a saucepan.
- Heat until the berries are just tender.
- Place squash in an ovenproof dish.
- Fill cavities with fruit.
- Cover and bake until squash is tender, about 35-45 minutes.
