Pasta With Grilled Chicken, Goat Cheese, Spinach And Sun-Dried
- 6 Tbsp. olive oil
- 2 Tbsp. fresh lemon juice
- 1 tsp. dried basil
- 1 tsp. dried oregano
- 1 lb. boned and skinned chicken breasts
- 3/4 lb. uncooked medium pasta
- salt and freshly ground black pepper
- 2 medium cloves garlic, finely chopped
- 3 c. packed shredded spinach leaves
- 1 c. packed, drained sun-dried tomatoes, cut into 1/4-inch strips
- 1/2 lb. fresh goat cheese, cut into medium sized chunks
- 2 Tbsp. finely chopped fresh Italian parsley
- In a mixing bowl, stir together 2 tablespoons olive oil with lemon juice, basil and oregano.
- Add chicken breasts.
- Turn to coat evenly and marinate about 30 minutes.
- Preheat the grill or broiler.
- Cook pasta until al dente.
