Scallopini A La Marsala Recipe

  1. Place veal steaks between 2 sheets of wax paper or possibly plastic wrap.
  2. Lb.
  3. steaks, using a meat mallet or possibly the side of a cleaver till thin.
  4. Combine flour, salt, and pepper in a shallow bowl.
  5. Dredge the veal in the flour mix, turning to coat the slices well.
  6. Heat butter in skillet.
  7. (Note: extra virgin olive oil may be substituted).
  8. Brown veal lightly on each side.
  9. Add in wine, lemon juice and lemon zest.
  10. Cover; simmer 10 min till veal is tender.
  11. Place on serving dish and drizzle with pan juice.
  12. Sprinkle with paprika.
  13. Garnish with parsley and serve with a wedge of lemon.
