Creamy Chocolate Cookie Pie
- 1 3/4 cups (about 20) crushed chocolate sandwich cookies
- 1/4 cup Land O Lakes Butter, melted
- 1 (1-ounce) square semi-sweet baking chocolate
- 1 (5-ounce) package chocolate cook and serve pudding and pie filling mix
- 3 cups Dairy Ease 100% Lactose Free Reduced Fat Milk*
- 6 chocolate sandwich cookies, quartered
- 1/4 teaspoon vanilla
- 1 cup non-dairy whipped topping
- Combine 1 1/2 cups cookie crumbs and butter in small bowl; mix well.
- Press evenly onto bottom and up sides of ungreased 8- or 9-inch pie pan.
- Set aside.
- Melt chocolate in 2-quart saucepan over low heat (1 minute).
- Stir in pudding mix and milk with wire whisk.
- Increase heat to medium.
- Cook, stirring constantly, until mixture comes to a full boil (10 to 12 minutes).
- Remove from heat; stir in cookies and vanilla.
- Pour into prepared crust.
- Cover; refrigerate until set (3 to 4 hours).
- To serve, dollop individual servings with 2 tablespoons whipped topping.
- Garnish with remaining cookie crumbs.
- *Substitute Dairy Ease 100% Lactose Free Whole Milk or Fat Free Milk.
