Pasta with Tomato and Black Olive Sauce

  1. In a large pot, heat 2 tablespoons of the olive oil.
  2. Add the onion, garlic and anchovies and cook over moderate heat, stirring occasionally, until starting to soften, 5 minutes.
  3. Stir in the carrots and celery and cook, stirring occasionally, until softened, 7 to 8 minutes.
  4. Add the zucchini, eggplant, summer squash, crushed red pepper and the remaining 3 tablespoons of olive oil and season with salt and pepper.
  5. Cook, stirring occasionally, until the vegetables are softened, 15 minutes.
  6. Add the wine and simmer for 2 minutes.
  7. Add the tomatoes, olives and basil and cook, stirring, for 10 minutes.
  8. Season with salt and pepper.
  9. Meanwhile, in a large pot of salted boiling water, cook the pasta until al dente.
  10. Drain, reserving 1/2 cup of the pasta cooking water.
  11. Add the pasta and cooking water to the vegetables, season with salt and pepper and cook over moderate heat, tossing, until saucy.
  12. Transfer to a bowl, garnish with Parmigiano and serve.
