New Years Day Lucky Blackeyed Peas
- 16 ounces, weight Dry Black Eyed Peas
- 6 cups Water
- 1 cube Vegetable Bouillon
- 4 slices Bacon
- 1 whole Medium Onion, Chopped
- 3 cloves Garlic, Chopped
- 1 whole Yellow Bell Pepper, Stemmed, Seeded, And Chopped
- 2 cups Cooked Ham, Diced
- 1 teaspoon Cumin Powder
- 3/4 teaspoons Ground Black Pepper
- 1/2 teaspoons Dry Cayenne Pepper
- 1/4 teaspoons Salt
- 1 Tablespoon Honey
- 1 whole Jalapeno, Seeded And Chopped
- 1 can (10 Oz. Size) Original Rotel Tomatoes
- 2 cups Chopped Fresh Greens (Kale, Spinach, Mustard Greens Or Collard Greens)

- First rinse all the dried peas and pick out any brown ones.
- 2.
- Place in slow cooker with water and bouillon.
- 3.
- In a skillet, cook the bacon about halfwayjust till the color changes, but not till crispy.
- Reserve the bacon grease and place the bacon on a paper towel to cool.
- 4.
- Saute the onion, garlic and bell pepper in the bacon grease until vegetables are soft.
- 5.
- Break the bacon up into little pieces and stir into the slow cooker with the cooked veggies and cubed ham.
- 6.
- Add the spices, honey, jalapeno and Rotel.
- 7.
- Cover and cook for 3 hours on high, then 2 hours on low.
- 8.
- Stir in chopped greens, cover and cook on low an additional 30 minutes until greens are soft.
- Serve with cornbread and a southern style hot sauce.
