New Years Day Lucky Blackeyed Peas

  2. First rinse all the dried peas and pick out any brown ones.

  4. Place in slow cooker with water and bouillon.

  6. In a skillet, cook the bacon about halfwayjust till the color changes, but not till crispy.
  7. Reserve the bacon grease and place the bacon on a paper towel to cool.
  8. 4.
  9. Saute the onion, garlic and bell pepper in the bacon grease until vegetables are soft.

  11. Break the bacon up into little pieces and stir into the slow cooker with the cooked veggies and cubed ham.
  12. 6.
  13. Add the spices, honey, jalapeno and Rotel.
  14. 7.
  15. Cover and cook for 3 hours on high, then 2 hours on low.
  16. 8.
  17. Stir in chopped greens, cover and cook on low an additional 30 minutes until greens are soft.
  18. Serve with cornbread and a southern style hot sauce.
  19. Enjoy!
