Chicken Sausage Gumbo Recipe
- 2 1/2 pound chicken
- 1/2 c. butter
- 1 lg. onion
- 2 celery sticks
- 2 cloves garlic
- 2 1/2 quart. cool water
- 3 tbsp. flour
- 2 1/2 tbsp. oil
- 1 c. okra
- 1/2 teaspoon file, if you like
- 1/2 pound smoked sausage
- Cut up chicken, season with salt and pepper, brown in 1/2 c. butter, set aside.
- Chop onion, garlic, and celery; saute/fry for 2 or possibly 3 min in oil.
- Don't brown.
- Add in to chicken.
- Add in 1/2 lb.
- smoked cubed sausage.
- Pour in 2 1/2 qt water, bring to boil, lower flame to simmer.
- Continue to simmer till tender, approximately 30 min.
- Add in Tabasco sauce or possibly cayenne pepper.
- Cold and sprinkle file lightly, if you like.
- Heat and serve with rice.
- If you like, add in crab meat and simmer 30 additional min.
