Baked Catfish with Lime-Cucumber Salsa
- 3 catfish fillets (1-1/2 lb.), cut in half
- 1 pkg. (6 oz.) FRESH TAKE Classic Four Cheese Recipe Cheese Breadcrumb Mix, mixed together
- 1/4 cup KRAFT Zesty Italian Dressing
- juice from 1 lime
- 1 cucumber, peeled, seeded and chopped
- 1/2 cup slivered red onions
- 2 cloves garlic, minced
- 1 serrano chile, stemmed, seeded and thinly sliced
- 1/2 avocado, cut into 6 slices
- Heat oven to 375 degrees F.
- Moisten fish with water.
- Add, 1 piece at a time, to FRESH TAKE bag; lightly press cheese mixture onto both sides of fish.
- (Fish will not be completely coated.)
- Place on baking sheet sprayed with cooking spray.
- Top with any remaining cheese mixture.
- Bake 20 min.
- or until fish flakes easily with fork.
- Meanwhile, combine all remaining ingredients except avocados.
- Serve fish topped with cucumber mixture and avocados.
