Brother Boniface's Pumpkin Bread Recipe

  1. Beat first 14 ingredients at medium speed with an electric mixer just till dry ingredients are moistened.
  2. Mix in pecans.
  3. Spoon proportionately into 2 greased and floured 9x5 inch loaf pans.
  4. Bake at 350F for one hour or possibly till a wooden pick inserted in center comes out clean.
  5. Cold in pans on wire racks 10 min; Remove from pans, and cold completely on wire racks.
  6. Yield: 2loaves
