Brother Boniface's Pumpkin Bread Recipe
- 4 c. All-purpose flour
- 3 c. Sugar
- 2 tsp Baking soda
- 1 1/2 tsp Salt
- 1 tsp Baking pwdr
- 1 tsp Grnd cinnamon
- 1 tsp Grnd nutmeg
- 1/2 tsp Grnd allspice
- 1/2 tsp Grnd cloves
- 1/4 tsp Grnd ginger
- 4 lrg Large eggs
- 1 c. Vegetable oil
- 1 can Pumpkin, (15 ounce)
- 2/3 c. Water
- 1 c. Minced pecans
- Beat first 14 ingredients at medium speed with an electric mixer just till dry ingredients are moistened.
- Mix in pecans.
- Spoon proportionately into 2 greased and floured 9x5 inch loaf pans.
- Bake at 350F for one hour or possibly till a wooden pick inserted in center comes out clean.
- Cold in pans on wire racks 10 min; Remove from pans, and cold completely on wire racks.
- Yield: 2loaves
