Chicken Stew
- 1 onion
- dash vegetable oil
- 5 carrots
- 400 grams cauliflower and broccoli florets
- 1 swede
- 3 potatoes
- 2 stock cubes
- 410 grams diced chicken
- 200 grams plain flour
- 300 ml water
- Dice the onion and sweat in a large saucepan on a high heat
- Peel and slice the carrots, swede and potatoes
- Make the stock according to package instructions
- Add the sliced vegetables to the onion and let this cook for a few mins
- Add the chicken, flour, stock and water
- Leave to simmer on a low heat for 2-3 hours until the chicken is cooked and the vegetables are soft
