Italian Chicken With Olives
- 12 cup seasoned bread crumbs
- 5 ounces romano cheese
- 3 boneless skinless chicken breasts, sliced in thirds, lengthwise
- 2 tablespoons olive oil
- 1 (10 ounce) can diced tomatoes, drained but juice reserved
- 7 garlic cloves, crushed
- 4 ounces kalamata olives, sliced
- 2 teaspoons balsamic vinegar
- 14 teaspoon red pepper flakes
- 5 teaspoons dried basil
- Mix breadcrumbs and cheese.
- Coat chicken slices with breadcrumb mixture on both sides.
- Heat olive oil in skillet to medium heat.
- Add chicken pieces and cook until golden brown.
- Set aside and keep warm.
- Add tomatoes, garlic, olives, vinegar and pepper flakes and half cup of liquid from tomatoes.
- Cook until slightly thickened and add basil.
