Jean's Summer Sausage

  1. Mix all ingredients thoroughly in a large mixing bowl.
  2. Split the mixture into 4 or 5 balls.
  3. Put each ball onto a sheet of aluminum foil (shiny side inside).
  4. Work mixture into long sticks (about 1 1/2" round) so when sliced it will fit a cracker.
  5. Close up the roll in foil and seal both ends.
  6. Put rolls in refrigerator for 24 hours.
  7. Using a broiler pan, take the top off and fill with 1/2 cup of water.
  8. Replace top of broiler pan.
  9. Poke 4 holes in the bottom of each roll.
  10. Set roll on broiler pan.
  11. Bake at 250 degrees for 3 hours.
  12. Remove rolls, open & cool.
  13. Slice and serve.
