Pepper Seared Fillet of Beef with Grilled Radicchio and Meat Jus

  1. Preheat the grill.
  2. Season the fillet with 2 tablespoons olive oil, Essence, and cracked pepper.
  3. In a saute pan, heat 2 tablespoons olive oil.
  4. When the oil is hot, sear the meat for 3 to 4 minutes for medium rare.
  5. Toss the radicchio and onions with 2 tablespoons olive oil and Essence.
  6. Place the radicchio and onion rings on the grill.
  7. Grill for 1 to 2 minutes on each side and remove.
  8. Julienne the vegetables.
  9. In a saute pan, heat the remaining olive oil.
  10. When the oil is hot, saute the shallots, radicchio, and onions for 1 minute.
  11. Add the garlic, green onions, and stock.
  12. Bring the liquid up to a boil and reduce the heat.
  13. Simmer for 2 to 3 minutes.
  14. Season with salt and pepper.
  15. In the center of the plate, mound the potatoes.
  16. Place the fillet against the potatoes.
  17. Spoon the sauce around the fillet.
  18. Drizzle a little truffle oil in the meat jus.
  19. Garnish with black pepper and green onions.
  20. Combine all ingredients thoroughly.
  21. Yield: 2/3 cup
