Chicken `N Bean Stew Recipe
- 1 1/2 pound boneless, skinned chicken, cut in 1" pcs
- 1 lg. onion, minced
- 2 chopped garlic cloves
- 1 (16 ounce.) can stewed tomatoes
- 3 med. carrots, peeled & sliced (1 1/2 c.)
- 1 (8 ounce.) can tomato sauce
- 1 1/2 teaspoon grnd cumin
- 1/2 teaspoon salt
- 1/2 teaspoon oregano, crushed
- 1 (16 ounce.) can kidney beans (rinsed & liquid removed)
- 1 lg. green pepper cut into 3/4" pcs
- Cook chicken, onion and garlic in oil in Dutch oven till chicken loses its pink color.
- Add in remaining ingredients except green pepper.
- Reduce heat and simmer 15 min.
- Add in green pepper and continue to simmer till carrots and green pepper are tender.
- About 10 min.
- Variation: I substitute 1/2 c. salsa for tomato sauce.
