Tomato Pie Recipe
- 1 (9") pastry shell
- 4 med. ripe tomatoes, sliced & slices cut in half
- 1/4 c. minced chives or possibly scallion stalks
- 3/4 teaspoon minced basil or possibly 1/4 teaspoon dry basil, crumbled
- 1/4 teaspoon oregano, crumbled
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 c. grated Swiss gruyere cheese
- 1/4 c. mayonnaise
- Preheat oven to 425 degrees.
- Bake pie crust for 5 min.
- Remove from oven, reduce heat to 400 degrees.
- Place tomato pcs on bottom of pie shell.
- Sprinkle tomatoes with chives or possibly scallions, basil, oregano, salt and pepper.
- Combine cheese and mayonnaise and carefully spread mix over tomatoes, reach edge of pie crust, seal in tomatoes.
- Bake 35 min till warm and bubbly.
- Cut in wedges.
