Chicken Reuben Bake
- 6 slices Rye Bread, Cubed
- 1/4 cups Butter, Melted
- 1 Tablespoon Butter
- 1/2 cups Onion, Diced
- 1/2 cups Sour Cream
- 1/2 cups Thousand Island Dressing
- 1 can 15 Oz Sauerkraut, Drained
- 3 whole Chicken Breasts, Cooked And Diced
- 1 cup Mozzarella Cheese, Shredded
- 1 cup Swiss Cheese, Shredded
- Preheat oven to 375F.
- Coat a 9x9 inch baking dish with nonstick spray.
- In a large bowl toss cubed bread and melted butter.
- Mix well and set aside.
- Over medium heat, saute onion with with butter and, once onions are softened remove from heat and mix with sour cream and dressing.
- Layer pan as follows: 1/2 of the bread mixture, then all of the sauerkraut, then the chicken, then the sour cream and onion mixture, Mozzarella cheese, and Swiss cheese.
- Top with the rest of the bread.
- Press down.
- Bake uncovered for 30 minutes.
- Enjoy!
