sig's Strawberry Risotto
- 350 grams / 12,oz/3 cups ,strawberries hulled and halved
- 150 grams / 4 oz/ half a cup risotto rice,
- 250 ml /9fl oz/ 1cup of,water
- 250 ml /9fl oz/ 1,cup of milk
- 110 grams /4 oz/ half a cup caster sugar
- 1 tbsp unsalted butter
- 1 pinch of salt
- 1 pinch freshly ground black pepper
- place the rice,,water and butter into saucepan bring to boil
- reduce to simmer, let rice absorb water, stirring until almost absorbed
- in the meantime combine milk and sugar and add to the rice( some people heat this first and then add to rice ) when water is absorbed
- cook for 15.minutes until rich and thick ,stirring from time to time
- add strawberry halves ,stir gently
- spoon into bowls sprinkle with fresh cracked pepper.
