Strawberry-Rhubarb Lemonade Sparkler

  1. Bring rhubarb and water to boil in saucepan on medium-high heat; simmer on low heat 5 to 7 min.
  2. or until rhubarb is tender and breaks down to smooth consistency, stirring occasionally.
  3. Strain through fine-mesh sieve, gently pressing rhubarb with back of spoon to extract all liquid.
  4. Pour strained liquid into blender; discard pulp.
  5. Blend rhubarb liquid, strawberries and drink mix until combined.
  6. Add ice cubes and half the sparkling water; blend on high speed until thickened.
  7. Pour into 2-L glass or plastic pitcher.
  8. Stir in remaining sparkling water.
  9. Serve immediately.
