Aromatic Yellow Rice

  1. Heat oil in heavy large saucepan over medium heat.
  2. Add shallots and stir 3 minutes.
  3. Add rice and next 5 ingredients; stir 2 minutes.
  4. Add broth and lime leaves and bring to boil.
  5. Reduce heat to low; cover and cook until liquid is absorbed and rice is tender, about 20 minutes.
  6. Remove from heat.
  7. Let stand, covered, 5 minutes.
  8. Discard cinnamon stick and lime leaves.
  9. Transfer rice to bowl.
