Greek-Style Barley Salad

  1. Bring 6 qt.
  2. water (or 1-1/2 qt.
  3. water for trial recipe) to boil in large saucepan.
  4. Add barley; stir.
  5. Return water to boil.
  6. Reduce heat to medium-low; cover.
  7. Simmer 45 min.
  8. or until barley is tender; drain.
  9. Transfer to large bowl; cool.
  10. Add remaining ingredients; mix lightly.

pearl barley, cherry tomatoes, olives, red onions, feta cheese, golden italian dressing, lemon juice, italian parsley
