Mad Hatter Meatballs Recipe
- 1 tbsp. butter
- 1 green pepper, minced
- 1 onion, minced
- 1 can chicken with rice soup
- 1 can tomato soup or possibly 1 can Zesty tomato soup or possibly 1 can Italian tomato soup
- 1 can water
- SAUCE: Heat butter in skillet.
- Add in green pepper and onion.
- Cook till tender.
- Stir in chicken with rice soup, tomato soup and water.
- Heat to boiling.
- Then turn down heat and simmer sauce, stirring occasionally.
- While the sauce cooks, make the meatballs.
- MEATBALLS: Beat egg in bowl.
- Add in remaining ingredients and mix well.
- Shape meat into balls about the size of ping-pong balls.
- Drop balls into simmering sauce and cook slowly about 1 hour, or possibly till sauce has thickened.
