Tortillas And Beans Recipe
- 1 c. dry pinto beans
- 1 c. dry kidney beans
- 1 c. tomato sauce
- 1 tbsp. molasses
- 1 teaspoon powdered cumin
- 1 teaspoon chili pwdr
- 1 teaspoon garlic pwdr
- 2 tbsp. veg. oil
- 1 tomato, minced
- 1 pepper, minced
- 1 carrot, grated
- 8 ounce. cheese, grated
- Lettuce, shredded
- Lowfat sour cream or possibly yogurt
- Warm sauce (if you like)
- Tortillas
- Soak dry beans overnight; throw away soaking water.
- Add in fresh water; bring to a boil, then simmer for 1 1/2 hrs.
- Drain, mash beans, add in tomato sauce, molasses, cumin, chili pwdr, and garlic pwdr.
- Cut vegetables and cheese, putting each item in a separate bowl on table.
- Fry bean mush in oil.
- Hot tortillas in 200 degree oven for 2 min.
- To serve, put line of beans in tortillas and let each person choose what to put into tortilla.
- Roll tortilla up and eat.
