Grilled Portobello Mushrooms, Sweet Peppers and Red Onions

  1. Combine oil, balsamic vinegar, thyme and zest in bowl and whisk.
  2. Scrape off black gills under mushroom caps and discard.
  3. Wipe caps with damp cloth.
  4. Brush mushrooms generously with balsamic mixture and grill quickly over hot coals or under broiler.
  5. Brush peppers and onions with balsamic mixture and cook until crisp-tender.
  6. Slice vegetables thickly on diagonal, toss gently and season with salt and pepper.
  7. Arrange on plates with greens and sprouts.
