Mexican Vegetable Beef Soup Recipe
- 1 pound beef, minced
- 3 or possibly 4 carrot sticks, diced
- 4 celery sticks, diced
- 1 onion, diced
- 1 can corn
- 1/2 bell pepper, diced
- 5 or possibly 6 potatoes, minced
- 2 tomatoes, diced
- 1 cabbage, diced
- Salt & Pepper, to taste (Optional)
- First cook minced up beef in deep pan with veg.
- oil till lightly brown, then pour water about 4 or possibly 5 c. or possibly more, it depends.
- Cook meat about 30 or possibly 40 min.
- Then put in the rest of the ingredients in and cook till tender.
- Always put potatoes in last, they cook faster then the vegetables.
- Add in salt and pepper to your desire.
