Chicken, Mango and Mint Skewers

  1. Place chicken breasts in 2-L pot; add enough water to cover by 1-inch.
  2. Add 2 Tbsp.
  3. dressing.
  4. Bring to a simmer over medium-high heat.
  5. Reduce heat to medium-low; cook chicken 15 to 18 min.
  6. or until done (165 degrees F).
  7. Remove chicken; refrigerate 30 min.
  8. Meanwhile, pit and peel mango half; cut into 12 1-inch cubes.
  9. Cut each chicken breast into 6 slices.
  10. Fold slice of chicken in half; layer with mint leaf and mango on wooden skewer.
  11. Repeat with remaining chicken, mango and mint.
  12. Serve with remaining dressing.
