Chicken, Mango and Mint Skewers
- 2 small boneless skinless chicken breasts (1/2 lb./225 g)
- 1/4 cup Kraft Extra Virgin Olive Oil Fig Balsamic Dressing, divided
- 1/2 mango
- 12 mint leaves
- Place chicken breasts in 2-L pot; add enough water to cover by 1-inch.
- Add 2 Tbsp.
- dressing.
- Bring to a simmer over medium-high heat.
- Reduce heat to medium-low; cook chicken 15 to 18 min.
- or until done (165 degrees F).
- Remove chicken; refrigerate 30 min.
- Meanwhile, pit and peel mango half; cut into 12 1-inch cubes.
- Cut each chicken breast into 6 slices.
- Fold slice of chicken in half; layer with mint leaf and mango on wooden skewer.
- Repeat with remaining chicken, mango and mint.
- Serve with remaining dressing.
