The Pimento BLT

  2. Cook the bacon until crispy.

  4. Slice four 1/4 thick slices from the tomato.
  5. 3.
  6. Toast the muffins.
  7. 4.
  8. On each bottom muffin layer the lettuce, then 1/4 of the pimento cheese.
  9. 5.
  10. Top with 2 slices of the bacon and a tomato slice before topping with the muffin top.
