Black Beans With Pork Recipe
- 2 c. (1 lb.) black, dry beans
- 1/4 c. Extra virgin olive oil
- 1 x Clove chopped garlic
- 1 lrg Onion minced fine
- 1 x Green pepper minced fine
- 1 tsp Salt
- 1/4 tsp Black pepper
- 1 lb Smoked pork, lightly salted, (1" cubes)
- 1/2 lb Sausage, cut into small balls
- 1/2 c. Orange juice
- 1/2 c. Dry red wine
- Cook beans till tender.
- Heat the extra virgin olive oil in a skillet and add in the garlic, onion, green pepper, black pepper, salt and simmer for 20 min.
- Fry pork and sausage, easy on the pork ,its already smoked , till completely cooked.
- Puree one c. of the beans, add in to the puree the wine and orange juice and simmer the cooked meat in this mix for five min.
- Remove the meat and mix it with the whole beans.
- Serve the beans and meat mix, beans and wine and orange juice sauce each in separate dishes with boiled rice.
- Each diner takes whatever proportion desired of each dish and mixes them together on the plate.
- Serves 8.
