Mojito Mousse
- 2-1/2 limes, divided
- 1 pkg. (4-serving size) Jell-O Vanilla Instant Pudding
- 1 cup cold milk
- 1 Tbsp. white rum
- 3/4 cup thawed Cool Whip Light Whipped Topping
- 1 Tbsp. slivered fresh mint
- Cut lime half into 4 thin slices; set aside.
- Grate zest, then squeeze juice from remaining limes.
- Beat pudding mix, milk, rum and lime juice in medium bowl with whisk 2 min.
- Stir in Cool Whip, mint and 2 tsp.
- lime zest.
- Place 1 lime slice in each of 4 small dessert glasses as shown in photo.
- Spoon pudding mixture into prepared glasses; sprinkle with remaining zest.
- Refrigerate 1 hour.
