Mojito Mousse

  1. Cut lime half into 4 thin slices; set aside.
  2. Grate zest, then squeeze juice from remaining limes.
  3. Beat pudding mix, milk, rum and lime juice in medium bowl with whisk 2 min.
  4. Stir in Cool Whip, mint and 2 tsp.
  5. lime zest.
  6. Place 1 lime slice in each of 4 small dessert glasses as shown in photo.
  7. Spoon pudding mixture into prepared glasses; sprinkle with remaining zest.
  8. Refrigerate 1 hour.
