Herfers' Pea and Tomato Salad
- 4 cups cooked peas
- 3 cups halved cherry tomatoes
- 1 cup seeded chopped tomato
- 1 cup cucumber, peeled and seeded and chopped into 1/2 inch pieces
- 1 large sweet onion, -sliced very thinly then roughly chopped
- 12 cup bacon
- 1 14 cups low-fat mayonnaise
- 13 cup bacon caesar salad dressing
- 2 teaspoons horseradish
- 12 teaspoon liquid smoke
- salt
- pepper
- Combine all your vegetables and mix them up well then stir in bacon.
- Mix the mayonnaise, salad dressing, horesradish and liquid smoke together.
- Taste and adjust seasonings.
- You may want to try 1/4 tsp of liquid smoke and add a couple of drops at a time to your taste.
- Combine dressing with vegetables.
- Taste and add salt and pepper to taste.
- Chill before serving.
