Poppy Seed Cake Muffins Recipe
- 2 1/4 c. sugar or possibly less
- 3 Large eggs
- 1 1/8 c. salad oil
- 3 c. flour
- 1 1/2 teaspoon salt
- 1 1/2 teaspoon baking pwdr
- 1 1/2 teaspoon vanilla
- 3 teaspoon poppy seeds
- 1 1/2 teaspoon almond flavoring
- 1 1/2 teaspoon butter flavoring (optional)
- 1 1/2 c. lowfat milk
- Cream together sugar, Large eggs and oil.
- Add in flour, salt and baking pwdr alternately with lowfat milk.
- Add in vanilla, poppy seeds and flavorings.
- Beat 1-2 min.
- Bake at 350 degrees for 40-45 min as cake and 10-15 min as muffins.
