Pineapple Pie
- 2 cups graham cracker crumbs
- 1/2 cup sugar
- 8 tbsp. margarine
- butter
- 2 pkg. instant vanilla pudding
- 1 can (1-1/4 lb.) crushed pineapple, undrained
- 1 pint sour cream
- 1/2 pint whipping cream
- 1 tsp. vanilla
- To prepare crust, combine all ingredients and press into 9-inch pie pan.
- Bake at 325F for 15 minutes.
- Cool.
- To prepare filling, combine all ingredients.
- Pour into cooled pie crust and refrigerate until filling sets.
- To prepare topping, combine cream and vanilla and whip until cream is spreadable.
- Immediately before serving, top filling with whipped cream.
