Apple & Almond Muffins
- 2 cups wholemeal S.R flour
- 1 cup natural muesli, unsweetened
- 1/2 cup dried apple, roughly chopped
- 1 teaspoon baking powder
- 1/2 teaspoon mixed spice
- 1 cup unsweetened apple juice
- 1/4 cup canola oil
- 2 eggs
- 1/4 cup flaked almonds
- 125g tub PHILADELPHIA Light Spreadable Cream Cheese
- Combine the flour, muesli, apple, baking powder and mixed spice in a large bowl.
- Whisk together the apple juice, oil and eggs.
- Pour into dry ingredients and mix until just combined.
- Spoon into 12 x 1/2 cup capacity muffins pans.
- Press flaked almonds into the top of each muffin.
- Bake at 200 degrees C for 15 minutes.
- Allow to cool, halve and spread with Philly*.
