Apple & Almond Muffins

  1. Combine the flour, muesli, apple, baking powder and mixed spice in a large bowl.
  2. Whisk together the apple juice, oil and eggs.
  3. Pour into dry ingredients and mix until just combined.
  4. Spoon into 12 x 1/2 cup capacity muffins pans.
  5. Press flaked almonds into the top of each muffin.
  6. Bake at 200 degrees C for 15 minutes.
  7. Allow to cool, halve and spread with Philly*.
