Amy's Pork Ribs
- 1 pork rib rack, split in half lengthwise by the butcher
- 1 star anise
- 6 pieces fresh gingerroot, thinly sliced
- 14 cup rice wine
- 1 teaspoon salt (Soy sauce is plenty salty already) (optional)
- 12 tablespoon brown sugar
- 2 tablespoons soy sauce
- With a sharp knife, separate the riblets on each half rack.
- Place riblets into a large wok or pan and cover with cold water.
- Add Anise star, Ginger slices, salt & wine.
- Bring to a boil and reduce liquid, skimming white froth off as needed.
- Your stove will determine the length of time req'd to reduce liquid.
- When liquid is nearly gone, add Sugar + Soy sauce.
- Brown riblets in soy & sugar, turning frequently.
- Serve warm.
