Amy's Pork Ribs

  1. With a sharp knife, separate the riblets on each half rack.
  2. Place riblets into a large wok or pan and cover with cold water.
  3. Add Anise star, Ginger slices, salt & wine.
  4. Bring to a boil and reduce liquid, skimming white froth off as needed.
  5. Your stove will determine the length of time req'd to reduce liquid.
  6. When liquid is nearly gone, add Sugar + Soy sauce.
  7. Brown riblets in soy & sugar, turning frequently.
  8. Serve warm.
