First Ginger Molasses Cookies

  1. Combine flour, spices, baking soda and salt.
  2. With an electric mixer at medium-low speed, beat butter & sugar, until light & fluffy.
  3. Beat in egg and molasses.
  4. Reduce speed to low and gradually add flour mixture until just mixed.
  5. Chill until firm, about 1 hour.
  6. Heat oven to 350F (180C).
  7. Shape dough into approximately 1 inch balls, roll in sugar and place about 2 inches apart on a baking sheet.
  8. Bake until the edges begin to brown, about 15 min.
  9. Cool on baking sheet 2 min, then move to wire racks.
  10. Cool completely.
