Split Pea Soup

  1. Steep split peas in hot water for an hour then drain.
  2. Fry onion and garlic in soup pot for 4 minutes.
  3. Add the rest of the vegetables plus the peas, the caraway seed, the bay leaf andamp; the mace.
  4. Cook for 5 to 6 minutes, stirring occasionally.
  5. Add most of the stock.
  6. Bring to a boil, reduce heat and simmer for 40 minutes.
  7. Remove the bay leaf and allow to cool slightly.
  8. Blend until smooth.
  9. Reheat before serving, but don't boil.
