Bloody Mary Chopped Salad
- 1 tbsp. olive oil
- 1 tbsp. minced shallot
- 1/4 cup vodka
- 1 can spicy V-8 juice
- 2 tbsp. Worcestershire sauce
- 2 tbsp. red wine vinegar
- 1 tsp. Dijon mustard
- 1 tsp. sugar
- 1 tsp. bottled horseradish, drained
- 1/2 tsp. celery seed
- 1/2 lemon, juice of
- Salt and pepper to taste
- 8 oz. cooked shrimp
- 2 cups chopped tomatoes
- 1 cup sliced celery
- 1/2 cup sliced cucumber
- 1/3 cup halved pimiento-stiffed olives
- 1/4 cup sliced red onion
- 3 tbsp. chopped fresh parsley
- 1 tbsp. olive oil
- Heat 1 tablespoon oil in a saucepan over medium-high heat.
- Add the shallot and saute until soft around 3 minutes.
- Deglaze with the vodka and simmer until almost evaporated.
- Add the V-8 juice, Worcestershire, vingar, mustard, sugar, horseradish, celery seed and lemon juice.
- Let boil for 5 minutes, then add the salt and pepper to taste.
- Remove from the heat and chill in the fridge.
- Toss the remaining ingredients together in a bowl and season with salt and pepper.
- Split the salad among 6 salad plates and serve with the now chilled dressing in shot glasses with the salad on the side.
