Budget: Homemade Chicken Stock Recipe
- 3 lb Chicken backs and necks
- 1 x Onion
- 4 whl cloves
- 4 x Fresh parsley sprigs
- 1 x Celery stalk, minced
- 1 x Carrot, minced
- 1 tsp Dry thyme
- 1 x Bay leaf
- In large saucepan, combine 12 c. cool water, chicken, onion, cloves, parsley, celery, carrot, thyme and bay leaf; bring to boil.
- Skim foam from top.
- Reduce heat; simmer for 1-1/2 hrs.
- Strain through sieve, discarding vegetables and chicken bones.
- Chill for 8 hrs.
- Remove and throw away chicken fat from surface.
- 8 1/2 c. for $3.37 CDN Mar/95
