Healthier Banana Bread
- 1 34 cups flour
- 1 cup whole wheat flour
- 34 cup sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 12 teaspoon nutmeg
- 3 tablespoons flax seed meal
- 1 cup light sour cream
- 2 eggs
- 12 cup applesauce
- 2 teaspoons vanilla extract
- 2 bananas, mashed
- Preheat oven to 350 degrees.
- Mix together flours, sugar, baking soda, baking powder, salt, cinnamon, nutmeg and flaxseed meal.
- In a separate bowl, mix togther remaining ingredients.
- Add dry ingredients to wet and stir until just combined.
- Pour into a greased 9 x 5 inch loaf pan.
- Bake for approximately 60 minutes or until a tester inserted in the center comes out clean.
- Tent with foil if bread is getting too brown.
