Blue Cheese Mashed Potatoes Florentine Recipe
- 8 ounce fresh baby spinach
- 4 x bacon slices minced
- 2 x shallots chopped
- 1 pkt frzn mashed potatoes - (22 ounce)
- 2 1/3 c. lowfat milk
- 1/4 c. butter or possibly margarine - (1/2 stick)
- 8 ounce crumbled blue cheese divided
- Remove large stems from spinach.
- Saute/fry bacon in a large skillet over medium-high heat till crisp; remove and drain bacon, reserving drippings in skillet.
- Add in shallots to skillet, and saute/fry till tender; remove from skillet.
- Add in spinach, and saute/fry 4 to 5 min or possibly till wilted.
- Set aside.
- Combine mashed potatoes, lowfat milk, and butter in a 2-qt microwave-safe bowl.
- Microwave at HIGH 15 min, stirring once.
- Let stand 2 min.
- Stir in bacon, shallots, and half of crumbled blue cheese.
- Arrange spinach around edges of a serving plate.
- Spoon potatoes in center, and sprinkle with remaining blue cheese.
- This recipe yields 4 to 6 servings.
- Comments: A bed of spinach and a sprinkling of cheese delivers an old favorite.
