Blue Cheese Mashed Potatoes Florentine Recipe

  1. Remove large stems from spinach.
  2. Saute/fry bacon in a large skillet over medium-high heat till crisp; remove and drain bacon, reserving drippings in skillet.
  3. Add in shallots to skillet, and saute/fry till tender; remove from skillet.
  4. Add in spinach, and saute/fry 4 to 5 min or possibly till wilted.
  5. Set aside.
  6. Combine mashed potatoes, lowfat milk, and butter in a 2-qt microwave-safe bowl.
  7. Microwave at HIGH 15 min, stirring once.
  8. Let stand 2 min.
  9. Stir in bacon, shallots, and half of crumbled blue cheese.
  10. Arrange spinach around edges of a serving plate.
  11. Spoon potatoes in center, and sprinkle with remaining blue cheese.
  12. This recipe yields 4 to 6 servings.
  13. Comments: A bed of spinach and a sprinkling of cheese delivers an old favorite.
