Monterrey Chicken

  1. Preheat oven to 400
  2. Pound chicken to about 1/4" thickness, season with pepper.
  3. Grill the chicken until cooked.
  4. I use our George Foreman for about 8 minutes.
  5. Grease a baking dish.
  6. Arrange cooked chicken in dish.
  7. Spread barbeque sauce on top of each chicken breast (about 1 tbsp).
  8. Sprinkle cheese on top of chicken.
  9. Add some diced tomatoes, bacon bits, and green onions.
  10. Cook in 400 oven for about 5 minutes, or until cheese melts.
