Monterrey Chicken
- 4 frozen chicken breasts, thawed
- 1 pepper to taste
- 4 tbsp barbeque sauce
- 1 cup shredded cheddar cheese
- 1 can diced tomatoes
- 1/2 cup bacon bits
- 4 sliced green onions
- Preheat oven to 400
- Pound chicken to about 1/4" thickness, season with pepper.
- Grill the chicken until cooked.
- I use our George Foreman for about 8 minutes.
- Grease a baking dish.
- Arrange cooked chicken in dish.
- Spread barbeque sauce on top of each chicken breast (about 1 tbsp).
- Sprinkle cheese on top of chicken.
- Add some diced tomatoes, bacon bits, and green onions.
- Cook in 400 oven for about 5 minutes, or until cheese melts.
