Quinoa Veggies

  1. Leave tomato, corn and red pepper for later.
  2. Coat the rest of the vegetables with olive oil, salt, pepper, garlic and oregano.
  3. Don't be shy with the garlic.
  4. Place all of the veggies on a pan, roast in oven at 425F for 30 minutes.
  5. Once roasted, add into quinoa and mix in balsamic vinegar, corn and red pepper.
