Quinoa Veggies
- 1 cup quinoa
- 1 baby eggplant
- 1 yellow squash
- 6 bell peppers, multicolor
- 1 carrot, sliced
- 6 garlic cloves
- 1 yellow onion
- 12 cup olive oil
- 1 ounce salt & pepper
- 1 tablespoon oregano
- 8 ounces corn
- 12 cup balsamic vinegar
- 10 cherry tomatoes
- 1 roasted red pepper
- Leave tomato, corn and red pepper for later.
- Coat the rest of the vegetables with olive oil, salt, pepper, garlic and oregano.
- Don't be shy with the garlic.
- Place all of the veggies on a pan, roast in oven at 425F for 30 minutes.
- Once roasted, add into quinoa and mix in balsamic vinegar, corn and red pepper.
