Strawberry Shortcut Cake
- 1- 1/2 cup marshmallows mini
- 2 cups strawberries frozen, sliced, thawed
- 3 ounces jello strawberry
- 1 teaspoon vanilla extract
- 2- 1/4 cups flour, all-purpose
- 1- 1/2 cup sugar
- 3 teaspoons baking powder
- 1/2 cup vegetable shortening
- 1/2 teaspoon salt
- 1 cup milk
- 3 large eggs
- Grease a 9x13 inch pan.
- Sprinkle marshmallows evenly over bottom of pan.
- Thoroughly combine thawed strawberries with dry JellO.
- Set aside.
- In a large bowl, combine the remaining ingredients.
- Blend at low speed until moistened.
- Then beat 3 minutes at medium speed, scraping sides often.
- Pour batter evenly over marshmallows in pan.
- Spoon strawberry mixture evenly over batter.
- Bake at 350F (180C) for 45 to 50 minutes.
- Serve warm or cool.
