Pesto Chicken Sandwich

• 1 tablespoon oil
• 400g chicken tenderloins Whole Foods 1 lb For $3.99 thru 02/09
• 8 slices sourdough bread, toasted
• 1/2 cup CLASSICO Traditional Basil Pesto Sauce and Spread style dip
• 1 roasted red capsicum, cut into strips
• 4 slices roasted eggplant Safeway 1 ea For $1.28 thru 02/09
• 1/3 cup KRAFT Creamy Mayonnaise
• baby rocket leaves, if desired

1. HEAT the oil in a frypan and cook the chicken for 8-10 minutes or until cooked through.
2. Remove and set aside.
3. SPREAD the toasted bread with pesto then top with roasted capsicum, eggplant and chicken.
4. Drizzle with the mayonnaise, top with baby rocket if desired then close sandwiches with remaining bread.
5. Serve immediately.
