Pesto Chicken Sandwich
- 1 tablespoon oil
- 400g chicken tenderloins Whole Foods 1 lb For $3.99 thru 02/09
- 8 slices sourdough bread, toasted
- 1/2 cup CLASSICO Traditional Basil Pesto Sauce and Spread style dip
- 1 roasted red capsicum, cut into strips
- 4 slices roasted eggplant Safeway 1 ea For $1.28 thru 02/09
- 1/3 cup KRAFT Creamy Mayonnaise
- baby rocket leaves, if desired
- HEAT the oil in a frypan and cook the chicken for 8-10 minutes or until cooked through.
- Remove and set aside.
- SPREAD the toasted bread with pesto then top with roasted capsicum, eggplant and chicken.
- Drizzle with the mayonnaise, top with baby rocket if desired then close sandwiches with remaining bread.
- Serve immediately.
