Pesto Chicken Sandwich

  1. HEAT the oil in a frypan and cook the chicken for 8-10 minutes or until cooked through.
  2. Remove and set aside.
  3. SPREAD the toasted bread with pesto then top with roasted capsicum, eggplant and chicken.
  4. Drizzle with the mayonnaise, top with baby rocket if desired then close sandwiches with remaining bread.
  5. Serve immediately.
