Easy Cheesy Southwestern Meatloaf
- 1 12 lbs lean ground beef
- 3 slices white bread, chopped in pieces
- 1 egg, beaten
- 1 (10 ounce) can diced tomatoes with green chilies, drained
- 8 ounces Velveeta reduced fat cheese product, chopped in pieces
- 14 cup jalapeno pepper, chopped
- 14 cup baby portabella mushrooms, chopped
- 14 cup onion, chopped
- 2 teaspoons chili powder
- PREHEAT oven to 375F
- Mix all ingredients just until blended.
- SHAPE into loaf in 9x5-inch loaf pan.
- BAKE 1 hour or until cooked through.
- Remove from pan.
- Let stand 5 minutes before cutting into slices to serve.
