Birthday Pineapple Cream Pie Recipe
- 1/4 c. cornstarch
- 2/3 c. sugar
- 1/4 teaspoon salt
- 2 c. lowfat milk, scalded
- 3 yolks, slightly beaten
- 2 tbsp. butter
- 1/2 teaspoon vanilla
- 1/2 c. crushed pineapple, thoroughly liquid removed
- 3 egg whites
- 6 tbsp. sugar, additional
- 1 baked pie shell
- Mix cornstarch, sugar and salt in top of double boiler.
- Gradually add in scalded lowfat milk.
- Cook till thick, about 10 min, stirring constantly.
- Slowly add in small amount of warm mix to the slightly beaten egg yolks.
- Stir in remaining warm mix, cook at least 5 min, stirring constantly.
- Cold slightly and add in butter, vanilla and pineapple.
- Pour into cooled, baked pie shell and spread with meringue of the stiffly beaten egg whites and additional sugar.
- Bake at 350 degrees for 10 min or possibly till meringue is golden.
