Broccoli Casserole
- 1 cup of rice cooked according to directions
- 1 pkg. chopped broccoli "frozen"
- 1 medium size onion chopped
- 1 stick of margarine
- 1 can mushroom soup
- 1 can cheddar cheese soup
- Cook rice set aside.
- Melt margarine in frypan.
- Thaw broccoli drain well.
- Add broccoli and chopped onion to melted margarine and cook slow until onion is tender.
- In a large bowl combine rice broccoli, add soups undiluted, you may need to add a little water so that mixture is not dry.
- Grease a 13 x 9 inch casserole dish with margarine.
- Pour mixture in and cover with wax paper and cook for 20 minutes 700 watt microwave or can be cooked in conventional oven for 30 minutes uncovered.
- After cooking top with grated cheese.
- Allow cheese to melt.
- This casserole is good served with baked turkey, ham or baked chicken.
