Parmesan Fries

  1. Cut potatoes into fry like strips, and pat wedges dry with a paper towel.
  2. Place in a bowl and toss with thyme and pepper and drizzle with oil.
  3. Place single layer on a baking sheet and bake at 450 degrees for 30 minutes.
  4. Sprinkle cheese, salt and paprika (if using) evenly over wedges.
  5. Bake for another 10 minutes to brown.
