Jamaican Skillet

  1. Trim and discard excess fat from chicken.
  2. Place chicken in shallow dish.
  3. Pour 1/3 cup marinade over chicken; turn to evenly coat both sides of each piece.
  4. Refrigerate 30 min.
  5. to marinate.
  6. Remove chicken from marinade; discard marinade.
  7. Cook in large covered skillet on medium heat 5 min.
  8. on each side or until evenly browned.
  9. Remove from skillet; cover to keep warm.
  10. Add vegetables and garlic to skillet; cook, uncovered, 3 min., stirring frequently.
  11. Stir in soup, water and remaining marinade.
  12. Return chicken to skillet; cover.
  13. Cook 15 min.
  14. or until chicken is done (165F).
